Chicken: Substitute turkey, beef or pork.
Panko: for gluten-free breadcrumbs, or regular breadcrumbs.

What can we eat them with?
These chicken meatballs can be served in many ways! Serve with spaghetti or zucchini noodles, in a sandwich with marinara sauce (typical of Naples) and cheese, with a little rice and Greek salad,..
Or, one of my favorite ways, is as an appetizer, paired with sauces like marinara, barbecue, or tzaziki.
How to store them
Store leftover meatballs in an airtight container in the refrigerator for up to three days. Reheat in an air fryer or on a skillet. Freeze in a freezer bag for up to 3 months.
Mediterranean chicken meatballs

INGREDIENTS
- 500g minced chicken meat
- 30g of breadcrumbs or panko
- handful of chopped parsley
- 1 small onion, finely chopped
- 2 cloves of garlic, chopped
- 1 tsp. dried oregano
- 1/2 tsp. cumin powder
- 1/2 teaspoon of salt
- 1/4 teaspoon black pepper
ACCOMPANIMENTATION Optional
- Rice
- Greek salad with tomato, cucumber and black olives.
- Tomato sauce or Tzatziki sauce
- Parmesan
STEPS
Mix all the ingredients in a large bowl until well combined. This mixture will make about 12 meatballs, each weighing about 42 grams. I almost always make a whole kilo of chicken so I can freeze more.
Air Fryer: Spray the air fryer tray with cooking spray and place meatballs in the air fryer basket in a single layer, being careful not to touch them. Air fry at 375 degrees for 10-12 minutes until the meatballs are cooked through.
Paella: Heat 1 tablespoon olive oil in a pan over medium heat. Add the meatballs and cook until golden brown on all sides and cooked through, about 10 minutes.
In the oven: You can bake them at 200 degrees on a baking sheet for 15-20 minutes or until cooked.
You can serve the meatballs with tomato and cheese or with lettuce, rice, tzatziki sauce and Greek salad, for me they are the two best options.
