Protein bars can be very expensive and honestly, I don't love the taste or the ingredients in them. These protein cinnamon cookies are easy, cheap and delicious!! I've been making protein snack recipes to take to the office for the past year. I love creating new flavors and snack varieties. They taste much more natural and are much cheaper than the store-bought versions.
These protein cookies have an amazing texture, because they contain protein powder they are a bit dense, but I love them with chocolate on top or especially soaked in milk.
They have ~5g of protein in each cookie, making them a perfect snack on their own.

What makes cinnamon cookies so good?
These cookies have a secret besides cinnamon and sugar. There is a secret ingredient that makes them so special: cream of tartar.
What is cream of tartar? It is an acid that is often used to stabilize recipes such as meringue.
We don't use this ingredient for the fluffiness it gives to the recipe, but for its flavor.
If you can't find it, you can make the recipe without it, but you will lose a little of the flavor we are looking for.
How to make cinnamon cookies?
These cookies are easy to make.
Once you have mixed and chilled the dough, you will separate it into 8 equal sized cookie dough balls.
Next, you will roll each ball of cookie dough in a cinnamon and sugar mixture until it resembles a Donut.

Cinnamon and protein cookies

INGREDIENTS
- 40g unsalted butter, softened
- 100g of golden coconut or integral sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 tablespoons skim milk
- 120g spelt flour
- 125 grams of vanilla protein powder (I use Paleobull because it is pure, from cows that graze in the mountains and without additives or colorings.
- 1 teaspoon cream of tartar
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- To decorate: 2 tablespoons sugar 1 teaspoon cinnamon or chocolate
STEPS
- Preheat the oven to 170 degrees.
- Line a large baking tray with baking paper.
- In a large bowl or mixer, mix the softened butter and sugar.
- Mix the eggs, vanilla extract, and milk until combined.
- Add the flour, protein powder, cream of tartar, baking soda, cinnamon, and salt and mix.
- Use a 1 tablespoon scoop of cookie dough and form into balls.
- In a small bowl, combine the remaining sugar and cinnamon and roll each ball of dough.
- Place on the baking sheet, and bake for 8-10 minutes or until golden brown.
- I recommend that you put some strands of dessert chocolate on top of the cookies to add the finishing touch.
