How do I store it?
- Store in an airtight container for up to 4-5 days. Or freeze for up to three months. I would double/triple the amount and freeze half and take out as needed. Imagine coming home without dinner ready, taking the croquettes out of the freezer, putting them in the air fryer and in the meantime going to put on your pajamas...
TIPS/NOTES
- Choose a tender fish.
- Remember to add garlic, it gives it a special touch.
- If you have children, we can add a slice of cheese inside each croquette to make it tastier.
White fish and potato croquettes

INGREDIENTS
- 150 g of cooked potato
- 300 g of monkfish, hake or whatever white fish you have on hand.
- A knob of butter (optional)
- flour
- egg
- Panko
- Mild olive oil spray, spicy mayonnaise (optional), chopped fresh parsley, salt, black pepper.
STEPS
- Peel the potatoes and mash them with a knob of butter. Set aside.
- Boil the fish with water and salt and pass it through the pan with grated garlic.
- Mix the cooked fish with the potato. You can do this with a hand blender or a masher. Also add the chopped parsley. Let it rest in the refrigerator for at least 30 minutes.
- Prepare a plate with the flour, another with the 2 beaten eggs and another with the Panko breadcrumbs (which will have a little chopped parsley, a teaspoon of dried garlic and two teaspoons of optional sesame seeds).
- Form the croquettes using two spoons. They should weigh about 40g each. Dip them in flour, then in egg and finally in breadcrumbs.
- Fry the croquettes in an air fryer at 205 degrees until golden brown. Remember that we only want them to brown on top.
- You can serve it with spicy mayonnaise.
