You can say goodbye to chocolate "cravings" now, because these yogurt brownies will curb any sweet tooth attack. This brownie is light, fluffy, a little soft and dense in chocolate. Those of you who know me know that chocolate is never lacking in my house, so I have to look for different versions of chocolate recipes to be able to vary it.

How to make it gluten-free and dairy-free


Gluten-free: Change the flour to a gluten-free pastry flour (it should be a blend of flours, not just one type). Also, make sure the chocolate chips are gluten-free.

Dairy-free: Swap out the butter for coconut oil and use a lactose-free or coconut yogurt, and make sure your chocolate chips are dairy-free. Keep in mind that this may change the texture and consistency of your brownies.

    How to store your brownies
    Store leftover brownies in an airtight container at room temperature for up to three days. I have to tell you the truth, I double the recipe and freeze a ton of them, taking them out of the freezer in batches of two or more as needed.

    INGREDIENTS

    • 60 gr of melted butter or coconut oil
    • 150g coconut sugar or the sweetener of your choice
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • 60g of unsweetened cocoa powder
    • 230g of skyr or Greek yogurt
    • 60g of spelt flour for example.
    • 1/4 teaspoon salt
    • 1/2 teaspoon of baking powder
    • 70 g dark chocolate chips
    STEPS
    Preheat the oven to 170-180 degrees. Grease a square or rectangular pan or line it with baking paper.
    In a large bowl, mix the melted butter and sugar until smooth. Beat in the eggs, one at a time, then mix in the vanilla extract. Add the yogurt and mix until well incorporated.
    Add the cocoa powder, flour, salt, and baking powder to the wet ingredients. Gently mix until the dry ingredients are incorporated, being careful not to overmix.
    Stir in the chocolate pieces, making sure they are evenly distributed throughout the dough.
    Pour the brownie batter into the prepared pan, spreading it evenly. Bake the brownies in the preheated oven for 20-25 minutes.
    Remove the brownies from the oven and let them cool completely on a wire rack. Once cooled, cut into squares and serve.
    When we have people over, I add some melted chocolate strips on top with peanut butter or strawberry jam as if it were a Sacher.
