WALDORF CHICKEN SALAD

One of the best options, whether you're taking a Tupperware container for lunch or when you have people over (now that summer is coming) is to make versatile salads that provide all the macronutrients and that everyone will like.
Many of you ask me for recipes for eating vegetables in different ways, and the truth is that they are quite successful.
One of my favorites is the Waldorf Chicken Salad.
It's not totally traditional, I've changed some ingredients so you can add it to your diary, but it's VERY GOOD!

How to make a Waldorf chicken salad:
This Waldorf chicken salad is very easy! First of all, let's talk about the chicken. You can use any part, breast, thigh, turkey ham,... If you don't have it already cooked, ask the butcher to cut it into very small cubes. Take the opportunity when you go to buy it to buy double the amount and make a Mexican chicken with vegetables to make fajitas for example.

Once the chicken is done, add a large diced apple, chopped celery stalks, diced red onion, chopped fresh parsley, and toasted pecans to a large bowl. If you're wondering where the grapes are, I left them out because I wanted this salad to be make-ahead and I don't like how grapes look after a while. But feel free to add some if you feel like it!

  • Versatile recipe, you can make it with bonito, tuna, sardines, turkey, sweet ham,..
  • An easy way to increase protein and eat less boring vegetables.
  • It is kept in the fridge for a couple of days thanks to the lemon which prevents the apple from burning.
  • Complete single dish (if you wish)
  • It will fly, if you have guests make lots of it!!

Suggestions for serving it:

I love it with rice, lettuce wraps, in gazpacho, in fajitas or tacos,...or as a complement to a lettuce salad. Just add a little olive oil, or extra lemon juice or a good vinegar on top.

TIPS/NOTES

  • Chicken: You can use any cooked chicken breast or thigh.
  • Where are the grapes? I took them out for texture reasons if you take the tupperware or do like me and prepare it first thing in the morning when I have people over for lunch. If you prepare it on the spot, you can obviously add or change the apple for grapes.
  • Mayonnaise: I used homemade but you can buy a good quality one or a light one.
  • Gluten: the ingredients are naturally gluten-free.

INGREDIENTS

  • 450g diced or minced chicken breast
  • 1 large apple, diced (approx. 200 g)
  • 8 stalks of celery, chopped (200 g)
  • 1/4 red onion, diced (50 g)
  • 1 handful of chopped fresh parsley (30 g)
  • 30g toasted and chopped pecans
  • Extras that I often add but are optional: diced cucumber, diced tomato, other fruits, avocado,... (I know it's not exactly the original WALDORF recipe but in the end I adapt it to what I have in the fridge).
For the sauce:
  • 3 tablespoons of skyr or Greek yogurt or sour cream/dairy-free yogurt (45 g)
  • 3 tablespoons light mayonnaise (45 g)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon of lemon juice (30 g)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

    STEPS
    Mix all the salad ingredients in a large bowl.
    Whisk the sauce ingredients and pour over the top. Stir well!

    Enjoy immediately or store in the fridge to prepare meals for the week.
    We love this with toast, with rice or quinoa, in gazpacho, in lettuce wraps, burritos or in a good salad.
